Validation programme for professional qualification as a kitchen team member
What the profession involves
The kitchen team member helps receive and check food in the kitchen and process ingredients into basic preparations.
The kitchen assistant:
- applies basic cooking techniques to deliver a quality meal to the guest;
- packs, labels and stores products;
- sets up the buffet;
- assembles meal packages or seals trays;
- cleans equipment and areas.
The kitchen assistant carries out instructions, taking into account technical sheets, service and time schedules within a hierarchical team. The kitchen assistant works in the hall and in the kitchen of catering establishments. The work is done according to the rules of hygiene and food safety.

If you want to demonstrate your experience as a kitchen team member at a validation body, you do so by means of a practical test.
The language of instruction at the tests is Dutch.
You will be tested on whether you can:
- help receive food in the kitchen;
- process ingredients into basic preparations for a salad within a limited period of time;
- process ingredients into basic preparations for a basic salad dish within a limited timeframe;
- store processed products;
- clean the kitchen.
